Cup of Joe

Sorry no fun picture. I think we got this from Michael when Cordie was working at borders, but we have started making it at our home. Here's what you need.

*Milk (we use skim)
*White hot chocolate
*Caramel coffee syrup (we used sugar free)

Heat your milk in the microwave, add the white chocolate, and then the syrup. It is so delicious. You can find the syrup in the coffee aisle of stores. A great alternative to hot chocolate. Hope you enjoy!!

Kim's Homemade Granola

Granola
3/4 C. Brown Sugar
1/3 C. Vegetable Oil
1/3 C. Honey
5 C. Oats
1/2 C. Dry Milk
3/4 t. Cinnamon
Pinch of Salt
Extras can include: Raisins, Craisins, Sunflower seeds, Pumpkin Seeds, Wheat Germ, Flax Seed (whole or ground), coconut, dates
Mix brown sugar, oil, and honey in a saucepan. Heat until the sugar is dissolved. Combine dry ingredients in a large bowl. Pour sugar mixture over dry ingredients and mix well. Mix in any extras you would like. Pour into a cake pan or cookie sheet, and bake at 375* for 10 minutes. Stir once in the middle of cook time.
Store in an airtight container.
I usually make twice the recipe and then I increase the cooking time to 15 minutes.
This is a great fast and easy recipe. My kids love it and when I make it we snack on it all day.

Tortellini Soup



1 lb Italian sausage, I use 1/2 lb
1 cup chopped onion
2 cloves garlic
6 cups water
2 cups chopped tomatoes or 2-3 cans blended Italian stewed tomatoes
1 cup carrots chopped
5 beef bullion cubes
1 8oz. tomato sauce
1/2 tsp oregano
1/2 tsp basil

Brown and saute the sausage, onion, and garlic. Then add into a large pot with all of the above ingredients. Simmer uncovered for 30 minutes.

Add 1 1/2 cups chopped zucchini, 1/4 cup green pepper, 8 oz. cheese tortellini or the whole bag if you would like :) add 1 tsp parsley. Simmer 30-45 covered.

Chicken Lo Mein



1/2 lb. spaghetti, uncooked
1/4 cup KRAFT Asian Toasted Sesame Dressing
1 lb. boneless skinless chicken breasts, cut into strips
2 cloves garlic, minced
1 pkg. (16 oz.) frozen bell pepper and onion strips, thawed, drained
1/2 cup fat-free reduced-sodium chicken broth
1 Tbsp. peanut butter
1/4 cup lite soy sauce
2 Tbsp. chopped cilantro
2 Tbsp. chopped PLANTERS COCKTAIL Peanuts

COOK spaghetti in large saucepan as directed on package.

MEANWHILE, heat dressing in large nonstick skillet on medium-high heat. Add chicken and garlic; stir-fry 3 min. or until chicken is no longer pink. Add peppers, onions, broth and peanut butter; stir-fry an additional 3 to 4 min. or until chicken is cooked through.

DRAIN spaghetti; return to pan. Add chicken mixture and soy sauce; mix well. Spoon onto serving platter; sprinkle with cilantro and peanuts.

French Peasant Bread

This is probably the easiest bread I've ever made. It's yummy too!!

FRENCH PEASANT BREAD
1 pkg. yeast (1 Tbsp)
2 C warm water
1 Tbsp sugar
2 tsp salt
4 C flour
oil, corn meal, melted butter

Place yeast, water, sugar, & salt in bowl. Stir. Add flour & stir. Don't knead. Cover let rise 1 hour. Flour hands. Place dough in two rounds on oiled cookie sheet sprinkled with yellow corn meal. Let rise 1 hour. Brush with melted butter. Bake 425 for 10 minutes. Reduce heat to 375. Bake another 15 minutes. Brush with butter. ENJOY!!

Sweet Pork


SO eAsY AND sooooooo YUMMY

Sweet Pork
1 Pork Roast
1 C Brown Sugar
1 C salsa (i just use picante)
Put roast in crockpot, add brown sugar & salsa. Cook on low until pork pulls apart. Eat on tortillas with rice, beans, cheese, and anything else you so desire.
